Almost as a joke, in an evening with friends like many others, between a game and a laugh comes an unexpected consideration on the poverty of Italian cuisine abroad.
It is an awareness of the existence of much more than "spaghetti mandolino" and "pepperoni pizza". A desire to make known new facets of the beautiful country. A reflection on the variety of genuine products that our land offers us.
Thus was born Ris8, the first Risotteria in Denmark, located at WestMarket, in the heart of Vesterbro. Here is where we prepare fresh Risotto seven days a week.
Our menu consists of six different Risotti that change constantly, following the seasons and with a varied selection of vegetarian, vegan and gluten-free options.

Italian Risotto And Rice
Risotto has always been one of the cornerstones of the Italian gastronomic tradition, although it is often snubbed because of its difficulty in preparation and the time it takes.
We, however, have developed an innovative cooking system that allows us to solve these problems. We therefore offer a high quality product, capable of extending the love for this dish even outside the Italian border.
We import eleven types of rice from a small rice mill in the province of Vercelli, the land of Barolo and Nebbiolo, to give our customers a veritable taste experience to rediscover the virtues of this cereal.

Our Risotti are prepared at the time of order and are seasoned only and exclusively with high quality Danish products.
We pursue a constant research aimed at enhancing the ingredients of the territory, with special attention to organic and zero km.
A constantly evolving kitchen, composed of dynamic menus that follow the regularity of the seasons and the nature that surrounds us.
Our blackboard / menu hosts six Risotti, each month different, intertwined in a constant balance between respect for the Italian tradition and the adoption of typical ingredients from the Nordic cuisine.
Our dishes are a rainbow of colors, flavors and textures. We continuously experiment to offer our customers not only a full meal but a gastronomic experience, a short memory made up of small bites of uniqueness.
